The continued magic behind this restaurant lies with Jeroen van der Steen and Tiffany Lorist, a passionate couple who turned their love for food, culture, and each other into a culinary masterpiece.


Their story isn’t just about running a restaurant—it’s about daring to dream, embracing challenges, and redefining fine dining where the ocean sets the rhythm.

 

Falling in Love with Bonaire

Tiffany Lorist first visited Bonaire 15 years ago, seeking a break from the structured life in the Netherlands. At just 21, she craved freedom and adventure. “You’re always being lived in the Netherlands,” she explains. “I wanted something bigger.”

 

The trip, planned by her mother after a tough breakup, brought Tiffany peace amidst Bonaire’s pristine beaches and turquoise waters. Diving, which had eluded her due to ear pressure issues, finally clicked. Earning her certification deepened her connection to the island.

 

Back in the Netherlands, Bonaire lingered in her thoughts. When At Sea came up for sale years later, Tiffany—drawing from her family’s hospitality background—seized the chance to turn her vacation dream into reality.

 

A Chef’s Journey

For Jeroen van der Steen, Bonaire’s allure started during a childhood visit. At just 10, he declared he’d live there one day. That dream stayed with him, fueling his culinary ambitions.

 

At 19, Jeroen made the move. Working in local restaurants like The Beach and It Rains Fishes, he immersed himself in the island’s culture and cuisine, mastering local ingredients and refining French techniques.

 

Thrown into a leadership role at just 20, Jeroen learned on the job as head chef. “It was sink or swim,” he recalls. The experience shaped his approach to cooking and his determination to succeed.

 

When Jeroen and Tiffany met on Bonaire, their chemistry was undeniable. Though hesitant to mix work and romance, they eventually decided to join forces, and it proved to be the perfect recipe for success.


 

The Heart of At Sea

For seven years, Jeroen and Tiffany have co-led At Sea, blending his culinary vision with her gift for hospitality.

 

Housed in a 1912 fisherman’s cottage, At Sea balances charm and sophistication. Guests can dine under the stars on the terrace or inside on rainy days, surrounded by the warm, historic ambiance. The surprise menu, offering four to six courses that change every three weeks, is a highlight.

 

Jeroen’s cuisine marries classic French techniques with modern creativity and local flavors. Dishes like truffle risotto with sweetbreads or steamed bao filled with goat rendang with tamarind showcase his flair for bold, yet balanced, flavors. Vegetarian and special dietary options are thoughtfully crafted to ensure every guest feels cared for.

 

Wine pairings, curated by Tiffany, elevate the experience. “The surprise menu and wines are about discovery,” she says. “We want every course to feel like an adventure.” 

A Shared Passion

Jeroen and Tiffany’s success is rooted in their shared drive to innovate. Jeroen continually experiments with techniques, tackling challenges like Bonaire’s humid climate to create his handmade chocolates. During the pandemic, he launched Chocolates of Bonaire, offering artisanal treats that became a local favorite.

 

For Tiffany, At Sea is about more than food—it’s about creating an unforgettable experience. “I love watching Jeroen’s passion,” she says. “It inspires me to make At Sea a space where guests can connect, celebrate, and savor the moment.”

 

While managing a fine dining restaurant, the couple also balances life as parents to two young children. “It’s hectic but rewarding,” Tiffany adds.

 

The Future of Fine Dining

At Sea reflects Jeroen and Tiffany’s journey; their love for Bonaire, their creativity, and their commitment to excellence.
